Axis Deer Chops with Blueberry Compote

  1. Preheat the Traeger Grill to 450 for 15 minutes
  2. Brush the chops with olive oil and rub with salt, pepper, and your favorite Traeger Dry Rub. I used Traeger Coffee Rub.
  3. Place the chops side-by-side directly on the grill. Close the grill lid and cook until the internal temperature reaches 135°F (medium-rare), about 4-6 minutes on each side.
  4. Blueberry Compote
    Combine half of the blueberries, water, sugar and a squeeze of fresh lemon juice in a small saucepan. Cook over medium heat for 10 minutes, stirring frequently. Add remaining blueberries and cook for another 5-10 minutes, until thickened.
  5. Serve the chops with the blueberry compote. Drizzle with The Spicy Shark Hot Blueberry Syrup and garnish with fresh thyme.
